How to Make Queso Blanco

Queso Blanco is spanish for white cheese. It is also known as Panir in India. Some call it vinegar cheese. It is an excellent way to use sour milk. Queso Blanco is best made with sour milk, but fresh milk will work too.

    You will need:

  • Stainless steel pot
  • spoon
  • vinegar
  • raw milk, slightly soured
  • thermometer
  • colander

Place slightly soured raw milk into the pot. Heat milk to 185 degrees. Remove from heat. Add 1-2 tablespoons of vinegar per quart of milk. Stir well. The curds should begin to separate from the whey. Drain in a colander. Salt the curds and eat warm. Use Queso Blanco in any recipe calling for melted cheese.
